Best Chicken Stew and Dumplings

You will find a lot of chicken stew recipes but this is definitely the best chicken stew you will ever enjoy. My mother hailed from Scotland where dumplings are always popular and this is her creation. Try out this recipe and enjoy the rich indescribable taste of this stew.

Ingredients:

Chicken:

  • 2 table spoons butter
  • 2 tablespoons (Tbsp) olive oil
  • 1 whole chicken (cut into pieces)
  • salt and freshly ground pepper
  • 1/2 cup finely diced carrots
  • 1/2 cup finely diced celery
  • 1 medium onion, finely diced
  • 1/2 teaspoon ground thyme
  • 1/4 tsp turmeric
  • 1/2 tsp sage
  • 6 cups low-sodium chicken broth
  • 1 cup frozen peas (optional)

Dumplings:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup yellow corn meal
  • 1 heaping tsp baking powder
  • 1 tsp kosher salt
  • 2 cups half-and-half cream
  • Then add 2 Tblsp all-purpose flour
  • 2 Tblsp minced fresh parsley (optional)
  • Then add salt as needed

Directions:

  1. Chicken: Melt the butter in a pot over medium heat and add olive oil. Sprinkle the whole chicken with salt and pepper. In 2 batches, brown the chicken on both sides and remove to a clean plate.
  2. In the same pot, add diced carrots, celery and onions. Stir and cook for 3 to 4 minutes over medium-low heat. Stir in the thyme and turmeric, then pour in the chicken broth. Then stir to combine, then add the browned chicken. Cover the pot and simmer for 20 minutes.
  3. Dumplings: While the chicken is simmering, mix together the flour, corn meal, baking powder and salt in a bowl, the add 1/1/2 cups of half-and-half cream, stirring gently to combine. Set aside.
  4. Remove the chicken from the pot and set aside on a plate. Using 2 forks remove the chicken from the bones. Shred the chicken, then add it back to the pot. Mix together the remaining 1/2 cup half-and-half cream and flour, then add it to the pot and stir to combine. (Add the peas if using).
  5. Drop tablespoons of dumpling dough into the simmering pot. Add the minced parsley if using. Cover the pot and continue to simmer for 15 minutes, Check the seasoning; add salt if needed. Allow to sit for about 10 minutes and serve.

As an option you can also add 1/ 1/2 cups of a mixture of diced potatoes and turnip.

I believe that the unbelievable taste of this stew comes from the addition of thyme. Somehow this spice makes the taste deeply delicious and especially rich. Then of course the half-and -half cream is a decadent additive to the recipe.

The dumplings, although they are simple, absorb the tastes and gravy of the stew and add to the overall richness of the flavor. It seems the Scottish know their stews!!

To make this recipe even easier you can use 4 god sized boneless chicken breasts. Both recipes are delicious. This being said however, I have tried it both ways, but the whole chicken seems to add a bit more flavor to the end result.
